Vegetarian Lasagna Recipe: Easy Spinach Lasagna

- 1 package of lasagna noodles
- 1 jar of marinara sauce
- 1 package of frozen chopped spinach, thawed and drained
- 1 container of ricotta cheese
- 1 egg
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F. Grease a 9x13 inch baking dish with cooking spray.
2. Cook lasagna noodles according to package instructions. Drain and set aside.
3. In a medium bowl, combine ricotta cheese, egg, Parmesan cheese, parsley, and salt and pepper. Stir until combined.
4. Spread a thin layer of marinara sauce on the bottom of the baking dish. Layer with 3 lasagna noodles, then spread half of the ricotta cheese mixture over the noodles.
5. Spread a layer of marinara sauce over the ricotta cheese, then layer with half of the spinach. Top with 3 lasagna noodles and spread the remaining ricotta cheese mixture over the noodles.
6. Spread a layer of marinara sauce over the ricotta cheese, then layer with remaining spinach. Top with remaining lasagna noodles and spread remaining marinara sauce over the top.
7. Sprinkle with Parmesan cheese and bake for 30 minutes, or until lasagna is bubbly and heated through.
